Pumpkin sponge with a heavy mix of chai tea spices – ginger, cloves, cardamom, nutmeg and cinnamon – dark chocolate chips and flakes of milk chocolate on top, it’s earthy and wonderfully warming, tender but perfectly soft.

Puff pastry layered with sponge, vanilla pastry cream, whipped cream, a whole candied chestnut in the centre and strings of sweet, nutty, chestnut purée around the outside. It’s rich and indulgent in flavour, but every layer on top of the base is so light and delicate, the snowy mountain just melts in your mouth.
