What started as a humble pop-up inside Selfridges Food Hall has become a London staple for dreamy desserts, Cutter & Squidge lures you in with a mile-long display of sweets in Soho and more recently, The Royal Exchange building. The bakeshop’s undeniable success is all down to the biskie, a handheld delight combining the best bits of a biscuit, cake and cookie into one. Think delicately soft discs, sandwiched with fillings like buttercream, jams and even whole(!) brownies, crowned with teeny tiny toppings for good measure. The line-up knows no limits, so I’ve rounded up my favourite ones – ranked by order.
Classic s’mores biskie
Cutter & Squidge reimagines the American s’mores into something slightly more British, swapping graham crackers for chocolate biscuits and adding in layers of biscuit buttercream. All of that comes with a fluffy marshmallow in the middle, a drizzle of chocolate sauce and digestive crumbs on top – can we have one s’more please?
Billionaire dreambar biskie
Taking inspiration from their very own Billionaire cake, the aptly-named dreambar delivers the same flavours in miniature form. I say minitature, but it’s still a towering treat formed of a slab of chocolate, sitting nicely inbetween salted caramel cream, a dark chocolate drizzle and of course, chocolate biscuits. What’s that glistening on top, you ask? Oh, just 24K gold wrapped around ANOTHER piece of chocolate. She really is the dream.
Very berry cheesecake biskie
A seasonal special, the very berry cheesecake does a – very berry – good job at balancing sweetness with tangy notes. Featuring digestive-style biscuits with lovely nibbles of white chocolate, Cutter & Squidge infuses its buttercream with cream cheese and tops it off with a whole cherry, ensuring no part is too buttery or sweet.
Blueberry cheesecake biskie
Available all year round, the blueberry cheesecake is loved by many (including me) and it’s easy to see why. Brimming with fresh blueberries in every bite, this cheesecake-meets-biskie hybrid includes multiple layers of blueberry-infused cheesecake (sweetened with vanilla) and dollops of chunky blueberry jam – it’s practically overflowing with antioxidants.
